Costa Vida

The excitement shown by my friends and family over the new Costa Vida had me a bit perplexed.  Wasn’t this just yet another Mexican grill?  There are at least three other grills in a four block radius, including one directly across the street.  What is the fascination with burritos around here?  Because of this attitude, I had never bothered to try Costa Vida until it opened recently in American Fork  (599 W Main St, American Fork, UT 84003) .

I’m a chicken fan who is always disappointed in restaurant fare so I went ahead and ordered the Sweet Pork Tacos.  Unlike most grills, they put the tortillas back on the grill to make them a bit crispier.  And while I’m on the tortillas, these have got to be my favorite.  I don’t know if it is the dough itself, or actually seeing them pressed from a ball to flat tortilla, or perhaps a secret grilling temperature.  Whatever it is, I would go in just for the tortillas.  Back to the tacos:  excellent sweet pork, great rice, and I am a bit undecided on the beans.  Black beans and pinto beans are offered but no refried ones.  I miss the refried, but Eli loves the pinto beans and can easily pick them up.  Costa Vida does offer a reward card and in addition to that check out the top of your reciept.  Take a short survey online or by phone and get a free dessert.  Use your coupon for the Tres Leche.  It is a milky cake with whipped cream and strawberries.  The kids and I split one and it was plenty for all three of us.  The service at Costa Vida is also really good.  The staff is very friendly and vacated tables are quickly cleaned for new customers.  We’ve been eating there quite a bit, and you should to.
